Probably, many guess that the burning and sweet pepper are close relatives. Both of them belong to the Solanaceae family. Fruits of chili peppers come in a variety of sizes (their length varies from 1 to 20 cm). Of course, the most common colors are red, yellow and green, but the color range of pepper is not limited to them: its fruits are almost white, brown, and purple. Pepper is divided into three types. First, sweet, put in salads and second courses; the second - the so-called paprika - is used for canning; finally, the third kind of pepper, red hot, is known to everyone as spice. When choosing peppers, care must be taken to ensure that there is no damage to their peel. Fetal foot should be fresh and light green.

Biography and geography

Pepper pepper came to Europe from South America - Mexico and Guatemala, where it has been grown for more than two thousand years. It is said that this plant was called pepper solely because of Columbus's mistake, which took him for black pepper. (By the way, from the point of view of botany, black pepper has nothing to do with red.) It is said that for the Indians, pepper was the same necessary seasoning for food as for us - salt.

Sweet pepper was taken out later-out of the burning. It differs from its "relative" only in that it contains much less of a special substance-the capsaicin alkaloid, which imparts acuteness to peppers (in different pepper varieties it ranges from 0.007 to 1.9%). By the way, its name capsaicin was derived from the Latin name of pepper - capsicum.

In Russia, sweet pepper came from Bulgaria, due to which it received the "national" name of the Bulgarian, which, in general, is justified: in Bulgaria this vegetable has long enjoyed a well-deserved popularity. By the way, in the dictionary of Dahl this kind of pepper is called Turkish, and in biological reference books it appears as Mexican.

Healing properties

Initially, the pepper was grown as a medicinal plant, and it is not accidental: it is proved that capsaicin has analgesic and anti-inflammatory effect. That's why hot red pepper is used to make painkillers, ointments and gels. In addition, capsaicin is able to lower blood pressure and blood sugar; that's why pepper is very useful for people with diabetes.

But the sweet pepper is not inferior to its burning fellow on useful properties. Although capsaicin in it is much less, this vegetable is a recognized record holder for vitamin C. According to nutritionists, one large pod of sweet pepper is enough to satisfy the daily requirement of a person in this vitamin. There are in pepper and other substances necessary for our body: potassium, sodium, calcium, iron. In addition, it contains a small amount of B vitamins1 and B2. Sweet pepper is rich in carbohydrates, fats and proteins. And carbohydrates, which account for up to 50% of its fruits, are readily soluble and easily digestible sugars.

Of course, in the use of pepper, even sweet, you must observe the measure - especially with diseases of the digestive tract: this vegetable contains many essential oils and coarse fiber.

Pepper in cooking

Perhaps the most popular all kinds of peppers - from burning to sweet - are used in the homeland of this vegetable - in Mexico. In Bulgaria, where sweet peppers are preferred, it is usually combined with cottage cheese or brynza: this combination is present, for example, in the famous šopskom salate. In any Bulgarian restaurant you will be offered pepper burek - Baked pepper stuffed with cheese. Before baking it is recommended to sprinkle peppers with olive oil and only then put in a hot oven. Bake peppers for about 30 minutes. The prepared pepper becomes soft and covered with a grid of "wrinkles". With baked peppers, skin should be peeled off before use; it will be easier to remove if the hot pepper is held under a stream of cold water.

Salad from baked sweet pepper with tomatoes

You will need:

  • 3 - 4 sweet peppers,
  • 2 medium tomatoes,
  • 1 small onion,
  • 3 tbsp. spoons of vegetable oil,
  • greens and salt to taste.

Pepper bake in the oven, peel off the skin, seeds and stems, chop in small pieces. Add the diced tomatoes and the chopped onions. Salad well mix, season and season with oil. Before serving, let the salad stand for 10 to 15 minutes.

Pepper stuffed with cottage cheese

You will need:

  • 1 kg of sweet pepper, 
  • 2 eggs,
  • 3 medium tomatoes,
  • 300 g of cottage cheese,
  • 4 ст. ложки растительного масла, greens and salt to taste.

Pepper peel from the stems and seeds. Cottage cheese mix with eggs, one peeled and chopped tomato and finely chopped greens. Salt peppers from inside and fill with minced meat. Prepared peppers lay on a baking sheet, oiled, laying slices of tomatoes. Pour the peppers with butter and bake in the oven until cooked.
